(Horaiya Honten Co., LTD.)Horaiya Honten was established as in 1906 as has remained in business for over 100 years as a producer of koji. Koji is rice that has been fermented using a mold called Aspergillus oryzae, and it is a key ingredient in many of Japan’s traditional fermented food products, such as miso, mirin (alcoholic seasoning used in stewed dishes), sake, amazake (traditional sweet beverage made using rice koji, rice, and sake lees), and pickles. During the tour, you will see the inside of the factory and learn how miso paste is made. Guides speak in Japanese and English to teach everyone from small families to large tour groups about the benefits of miso. At the end of the tour, you can shop for koji products while enjoying amazake from Horaiya. Miso is also available to take home as a souvenir.
