Sukagawa City is one of the largest producers and exporters of cucumbers in Japan. 

Try their local specialty dish, Sukagawa Kappa Noodles, featuring these cucumbers.

The noodles, which have a distinctively bright light green color, are made by blending  the squeezed juice of the cucumbers and topping it off with a variety of ingredients including fresh cucumbers and locally harvested vegetables. 

Melt the special meat miso in each restaurant's original broth as you eat for a refreshing noodle dish perfect for the summer season.
