Sake brewing utilizing nature's blessings

Ozaki Shuzo was founded 161 years ago in 1860, the first year of the Man'en era (March 1860 - February 1861). The first head of the family moved to Ajigasawa from Wakasa (present-day Fukui Prefecture) 300 years ago, and after working as a fish broker, started his own sake brewing business. Ajigasawa is a place rich in nature, with the majestic Sea of Japan right in front of the brewery and Mt. Iwaki in its background.

And then there is the sacred Shirakami-Sanchi Mountain Range, a World Heritage Site. Spring water runs from the mountain range and flows to the back of the brewery. The underground water is used in abundance to make their sake. 

They also produce dry sake with a bold flavor that goes well with seafood and mountain vegetables.
